A weekend is not complete without baking some yummy
treats and since I am all in for new recipes I decided to bake a Lemon Drizzle
Cake. When Anna, aka Viviannadoesmakeup, made this cake last year, I knew that I had to make it myself. It looked
so good and since I love cake it was a
match made in heaven. Now it’s finally time for me to bake it and can I
just say that this is one of the best cakes I have ever tasted. It’s AMAZING!
What do you
need?
225g Unsalted Butter (In the original recipe it was salted butter,
but I didn’t do that)
225g Caster Sugar
275g Self-Raising Flour
1tsp Baking Powder
4 large Eggs
4tbsp Milk
Grated Zest of 2 Lemons
Juice of 2 Lemons
175g Granulated Sugar
First, set your oven to 180°C.
The best thing about this recipe is that it’s super
easy to make. Put the butter, caster sugar, self-raising flour, baking powder,
eggs, milk and grated zest in a large bowl and mix it all together with an
electric whisk until the mixture is smooth.
Grease a baking tray (round or square); this way you
can get the cake out very easily. You could also line it with baking parchment,
but I ran out of that (I am so well
prepared haha). Put the mixture in the baking tray and make sure that the
mixture is evenly spread. Put it in the oven for 40 minutes.
After 40 minutes you take the cake out of the oven and
out of the baking tray, so it can cool down. While the cake is cooling down you
can make the delicious lemon glaze. Put the granulated sugar in a bowl and add
the lemon juice gradually to the mixture until it becomes a paste. I added a bit
too much lemon juice, so be careful with that.
Then put some holes in the cake with a knife, so the
drizzle can soak into the cake. Now it’s time to put the glaze on top of the
cake. Make sure it’s spread evenly on top and wait for it to set.
Now your heavenly Lemon Drizzle Cake is done! Enjoy this yumminess with a cup of tea
and you’re happy as can be! :)
