As you all know, I really like
oatmeal. I have shared quite a few recipes on here and I have to say,
this one is the best yet!
I love carrot cake and I love
oatmeal, so what do you get if you mix the two: Carrot Cake Oatmeal! And yes it tastes as good as it sounds!
What do you need?
- One grated carrot
- 60 grams of oats
- 200 ml almond milk
- One tablespoon of agave
nectar
- A handful of crushed pecans
or walnuts
- A handful of raisins
- A pinch of ground cinnamon
- A pinch of pumpkin pie spice
Put the oats, grated carrot,
almond milk, agave nectar, ground cinnamon and pumpkin spice in a small
saucepan on a stove. Turn up to medium heat and keep stirring until it is
getting a thicker consistency.
Add the raisins and the
crushed nuts to the porridge and keep stirring until the porridge is perfect.
Scoop the porridge in a bowl and top it off with some grated carrot, raisins,
nuts and a sprinkle of cinnamon.
And there you have it your own
bowl of carrot cake oatmeal! It’s a healthier
option than regular carrot cake and it tastes amazing. Honestly this is
just the BEST breakfast!
